Honey and the hive
Where each honey comes from, how it looks, tastes and crystallises, and how standards define it. We describe chemistry and tradition, and we do not publish health promises.
Honeys named after a flower
A honey is called unifloral when one plant contributes most of the nectar. Laboratories confirm the origin by pollen analysis and by chemical and sensory profiles.

Honey without flowers
Honeydew honey comes mainly from the sugary excretions of plant-sucking insects, collected by bees from leaves and bark.
1Other products of the hive
Wax, resin, pollen and royal jelly each play a part in the life of the colony before people use them.
